Frugal cooking making leftovers

I love leftovers, matter in fact I like them so much I will cook extra on weekends just so I can have them for the week.  I work full time and commute so it makes it difficult to put real food on the table. These are really true meal stretchers.  I can plan my meals for the week based on what “extra” I cooked over the weekend.   This save tons of money, and it is extremely convenient since the majority of the cooking has been done.

Spiral Sliced Ham

I like to buy these on sale, there was a great sale 3 weeks ago for .99 cents a pound.  I buy about a 10 pound ham which equals about 6 pounds or so of meat.

Make this for one meal on the weekend then I remove all of the meat from the bone so it is conveniently ready for use:

Sandwiches for lunch for 3 or more days
Bone for soup one evening which I make in the crock pot
diced up ham pieces for wraps one evening
diced up ham pieces for omelets

 Chicken or Turkey

One turkey or two whole fryers when they are on sale, I will make two of  them at a time, alot of times I will make them on the grill.  Again I make this for one meal on the weekend and then take the meat off the bone so that I have it available for quick meals.

Grind up meat in food processor for chicken salad sandwiches for about 3 days
Make fajitas or tacos
Soup in the crock pot!
Add some to rice
Chicken pot pie

I get an average of three main meals with one ham or chicken meal.
